One-Pot Chili Mac Recipe

1 lb lean ground turkey or ground beef

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can diced tomatoes

2 tbsp tomato paste

1 1/2 cups low-sodium chicken or veggie broth

1 1/2 cups whole wheat or gluten-free elbow pasta

1 tsp chili powder

1/2 tsp cumin

Salt and pepper, to taste

1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and garlic and cook for 2–3 minutes until fragrant.

Add ground turkey and cook until browned, breaking it up with a spatula.

Stir in beans, tomatoes, tomato paste, broth, pasta, and seasonings. Bring to a simmer.

Cover and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.

Remove from heat and stir in cheese, if using. Let sit for a few minutes before serving.
