Grilled Snapper with Herbs Recipe

The first time I made snapper at home, I was nervous — whole fish? Fresh herbs? It felt a little out of my comfort zone. But the truth is, it’s one of the simplest meals I’ve ever made. A little olive oil, some lemon and fresh herbs, and that grill does all the work. Now it’s one of my favorite summertime dinners when I want something healthy that still feels a little fancy.
Ingredients:

4 snapper fillets or 2 whole red snappers (cleaned and scaled)

2 tbsp olive oil

Salt and pepper, to taste

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tbsp fresh thyme or oregano, chopped

Juice of 1 lemon

Lemon slices, for grilling and garnish
Instructions:

Preheat grill
Heat grill to medium-high. Oil the grates well if cooking directly, or use foil or a grill basket for fillets. -
Season the fish
Brush fish with olive oil and season both sides with salt, pepper, garlic, herbs, and lemon juice. -
Grill the snapper
Place fish skin-side down on the grill. For fillets, grill 3–4 minutes per side until the flesh flakes easily. For whole snapper, grill about 5–6 minutes per side. Add lemon slices to the grill during the last few minutes for garnish. -
Serve
Plate with grilled lemon, a sprinkle of extra herbs, and your favorite side like rice, grilled vegetables, or a fresh salad.
