Italian Sausage Sheet Pan Dinner Recipe

I don’t know about you, but there are nights when the thought of another pile of dishes is just too much. That’s why sheet pan dinners have become one of my go-to solutions.
This Italian Sausage Sheet Pan Dinner is everything I need on a weeknight: it’s hearty, colorful, full of bold flavor, and the oven does most of the work. Just chop, toss, roast — and dinner is done.
I first threw this together on a random Tuesday night when all I had in the fridge was some chicken sausage, a few lonely veggies, and zero energy. And guess what? Everyone loved it. Now it’s a staple in our house — especially when I want a healthy, no-fuss dinner that doesn’t look like I was winging it.
Ingredients

1 (12–14 oz) package Italian chicken sausage, sliced into 1-inch rounds

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, halved and sliced

1 red onion, cut into wedges

1½ cups baby potatoes, halved

2 tbsp olive oil

1 tsp garlic powder

1 tsp Italian seasoning

½ tsp sea salt

¼ tsp black pepper

Fresh parsley for garnish (optional)
Instructions

Preheat oven to 425°F. Line a large sheet pan with parchment paper or foil for easy cleanup.

Chop & prep: Slice sausage and vegetables. Add everything to the sheet pan.

Season: Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss well to coat everything evenly.

Roast: Bake for 25–30 minutes, stirring halfway through, until veggies are tender and starting to brown and sausage is golden.

Serve: Garnish with fresh parsley if desired and serve hot — as is, or over greens, quinoa, or cauliflower rice.

Sausage options: I use fully cooked chicken sausage, but you can use pork or turkey sausage too. Just make sure it’s pre-cooked or adjust the cooking time.
