Italian Sausage Sheet Pan Dinner Recipe

30-minute meals clean eating easy dinner gluten-free meal prep one pan sausage sheet pan

One pan. Zero stress. Big flavor.

I don’t know about you, but there are nights when the thought of another pile of dishes is just too much. That’s why sheet pan dinners have become one of my go-to solutions.

This Italian Sausage Sheet Pan Dinner is everything I need on a weeknight: it’s hearty, colorful, full of bold flavor, and the oven does most of the work. Just chop, toss, roast — and dinner is done.

I first threw this together on a random Tuesday night when all I had in the fridge was some chicken sausage, a few lonely veggies, and zero energy. And guess what? Everyone loved it. Now it’s a staple in our house — especially when I want a healthy, no-fuss dinner that doesn’t look like I was winging it.

Ingredients

  • 1 (12–14 oz) package Italian chicken sausage, sliced into 1-inch rounds

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, halved and sliced

  • 1 red onion, cut into wedges

  • 1½ cups baby potatoes, halved

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F. Line a large sheet pan with parchment paper or foil for easy cleanup.

  2. Chop & prep: Slice sausage and vegetables. Add everything to the sheet pan.

  3. Season: Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss well to coat everything evenly.

  4. Roast: Bake for 25–30 minutes, stirring halfway through, until veggies are tender and starting to brown and sausage is golden.

  5. Serve: Garnish with fresh parsley if desired and serve hot — as is, or over greens, quinoa, or cauliflower rice.

Tips & Swaps

  • Sausage options: I use fully cooked chicken sausage, but you can use pork or turkey sausage too. Just make sure it’s pre-cooked or adjust the cooking time.

  • Add more color: Cherry tomatoes or broccoli florets are great add-ins.

  • Make it spicy: Use hot Italian sausage for extra kick!

  • Meal prep win: This reheats beautifully for lunches the next day.

Why You'll Love It

This is the kind of dinner that feels homemade but takes minimal effort. The roasted sausage and veggies are bursting with flavor, and cleanup is a breeze. It’s healthy comfort food at its easiest.
