Golden seared scallops drizzled in a silky lemon butter sauce—this one-pan dinner feels fancy, but takes less than 20 minutes start to finish.

I used to think scallops were “restaurant food only.” You know, the kind of thing you only get on anniversaries or when someone else is cooking.

But after trying this recipe one busy Tuesday (yes, Tuesday!), I realized scallops are surprisingly fast, simple, and absolutely doable at home—especially when they’re cooked in a lemony garlic butter sauce that’s so good, I could drink it with a spoon.

Ingredients

  • 1 lb sea scallops (patted dry)

  • Salt & pepper to taste

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 3 garlic cloves, minced

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 1 tbsp fresh parsley, chopped

  • Optional: pinch of red pepper flakes

 

Instructions

  1. Prep scallops:
    Pat scallops very dry with paper towels. Season both sides with salt and pepper.

  2. Sear scallops:
    Heat olive oil in a large skillet over medium-high heat. Add scallops in a single layer (don’t overcrowd). Sear for about 2 minutes per side, until golden and opaque. Remove and set aside.

  3. Make the sauce:
    Reduce heat to medium. Add butter to the skillet and let it melt. Stir in garlic and cook for 1 minute until fragrant. Add lemon juice, zest, and red pepper flakes (if using). Stir well.

  4. Finish it off:
    Return scallops to the pan, spoon sauce over the top, and cook for another 1–2 minutes just to warm through.

  5. Serve & enjoy:
    Sprinkle with fresh parsley and serve immediately with roasted veggies, rice, or a simple salad.
