Grilled Lobster Tails with Herb Butter Recipe

The first time I made lobster at home, I was honestly a little scared. It felt like something only chefs should be touching. But once I tried grilling it with a simple herb butter, everything changed. Now it’s my favorite way to do something special without a ton of effort — and it’s ready in under 20 minutes. Even my husband was impressed!
Ingredients:
-
4 lobster tails (about 5–6 oz each), thawed if frozen
-
1 tbsp olive oil
-
Salt and pepper, to taste
-
Lemon wedges, for serving
For the herb butter:
-
¼ cup unsalted butter, melted
-
2 garlic cloves, minced
-
1 tbsp chopped parsley
-
1 tsp lemon juice
-
1 tsp fresh thyme or dill (optional)
-
Pinch of salt
Instructions:
-
Prep the lobster tails
Use kitchen shears to cut through the top shell of each tail down to the fin, then gently pull the meat out over the shell (but keep it attached at the base). Brush with olive oil and season lightly with salt and pepper. -
Make the herb butter
In a small bowl, combine melted butter with garlic, lemon juice, herbs, and a pinch of salt. Set aside. -
Preheat the grill
Heat grill or grill pan to medium-high heat. Clean and oil the grates. -
Grill the lobster
Place tails meat-side down for 3–4 minutes, then flip and brush with herb butter. Continue grilling 3–4 more minutes, or until meat is opaque and firm. -
Serve
Drizzle with more herb butter and serve with lemon wedges. Pair with grilled asparagus, a green salad, or roasted potatoes.
