Easy Garlic Butter Grilled Shrimp Recipe

Shrimp used to be one of those “special occasion” things I only ordered at restaurants. But once I learned how quick it was to cook at home — especially on the grill — it became a regular in our summer dinner rotation. This garlic butter version is my go-to. It’s smoky, buttery, and done in minutes. My kids love it over rice… I love it with a glass of chilled white wine.
Ingredients:

1½ lbs large raw shrimp, peeled and deveined (tails on or off)

1 tbsp olive oil

Salt and black pepper, to taste

Skewers (if using bamboo, soak in water for 30 minutes)
For the garlic butter:

¼ cup unsalted butter

3 cloves garlic, minced

1 tbsp lemon juice

1 tsp lemon zest
-
1 tbsp chopped parsley (plus more for garnish)
Instructions:

Prep the shrimp
Toss shrimp with olive oil, salt, and pepper. Thread onto skewers for easier grilling. -
Preheat the grill
Heat grill or grill pan to medium-high. Clean and oil the grates. -
Make garlic butter
In a small saucepan, melt butter. Add garlic and cook for 1–2 minutes until fragrant. Stir in lemon juice, zest, and parsley. Set aside. -
Grill the shrimp
Place shrimp skewers on the grill. Cook for 2–3 minutes per side, until opaque and slightly charred. -
Finish and serve
Brush shrimp with garlic butter while hot. Garnish with extra parsley and lemon wedges. Serve over rice, salad, or as a tasty appetizer.
