Easy Garlic Butter Grilled Shrimp Recipe

Shrimp used to be one of those “special occasion” things I only ordered at restaurants. But once I learned how quick it was to cook at home — especially on the grill — it became a regular in our summer dinner rotation. This garlic butter version is my go-to. It’s smoky, buttery, and done in minutes. My kids love it over rice… I love it with a glass of chilled white wine.

 

Ingredients:

  • 1½ lbs large raw shrimp, peeled and deveined (tails on or off)

  • 1 tbsp olive oil

  • Salt and black pepper, to taste

  • Skewers (if using bamboo, soak in water for 30 minutes)

For the garlic butter:

  • ¼ cup unsalted butter

  • 3 cloves garlic, minced

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp chopped parsley (plus more for garnish)

 

Instructions:

  1. Prep the shrimp
    Toss shrimp with olive oil, salt, and pepper. Thread onto skewers for easier grilling.

  2. Preheat the grill
    Heat grill or grill pan to medium-high. Clean and oil the grates.

  3. Make garlic butter
    In a small saucepan, melt butter. Add garlic and cook for 1–2 minutes until fragrant. Stir in lemon juice, zest, and parsley. Set aside.

  4. Grill the shrimp
    Place shrimp skewers on the grill. Cook for 2–3 minutes per side, until opaque and slightly charred.

  5. Finish and serve
    Brush shrimp with garlic butter while hot. Garnish with extra parsley and lemon wedges. Serve over rice, salad, or as a tasty appetizer.
