Beef & Veggie Kabobs Recipe

There’s something magical about food on a stick, right?
When my kids were little, kabobs were one of the first dinners they’d actually get excited about eating. Maybe it was the bright colors… maybe it was the fun of pulling bites off the skewer… but these beef & veggie kabobs became a regular on our summer dinner rotation — and they’ve stuck around ever since.
They're quick to prep, perfect for the grill, and totally customizable. And the best part? You can marinate everything ahead of time, so dinner practically makes itself when the grill heats up.
Ingredients
For the marinade:

¼ cup olive oil

3 tbsp soy sauce (or coconut aminos)

2 tbsp balsamic vinegar

2 tsp Dijon mustard

2 cloves garlic, minced

1 tsp dried oregano

½ tsp black pepper
For the kabobs:

1½ lbs sirloin steak, cut into 1½-inch cubes

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 zucchini, sliced thick

1 red onion, cut into wedges

8–10 wooden or metal skewers
Instructions

Make the marinade: In a bowl or large zip-top bag, whisk together all marinade ingredients.

Marinate the beef: Add cubed steak to the marinade, toss to coat, and refrigerate for at least 30 minutes (up to 8 hours for deeper flavor).

Soak skewers (if using wooden): Soak in water for 30 minutes to prevent burning.

Assemble the kabobs: Thread steak and veggies onto skewers, alternating colors and textures for the prettiest presentation.

Grill: Preheat grill to medium-high heat. Grill kabobs for 10–12 minutes, turning every few minutes, until beef is cooked to your liking and veggies are tender with grill marks.

Rest & serve: Let rest for 5 minutes before serving with a side of rice, salad, or grilled potatoes.
