Strawberry Jello Pie Recipe (No Bake & So Easy!)

🍓 Ingredients:

For the crust:

  • 1 ½ cups almond flour or crushed grain-free graham crackers

  • 3 tbsp coconut oil or melted butter

  • 1 tbsp maple syrup or honey

  • Pinch of salt

For the filling:

  • 1 (3 oz) box natural strawberry gelatin (or unflavored gelatin + ½ cup strawberry juice)

  • 1 cup boiling water

  • 1 cup cold water

  • 1 ½ cups sliced fresh strawberries

  • 1 cup plain Greek yogurt or whipped coconut cream

Optional Toppings:

  • More sliced strawberries

  • Whipped topping or coconut cream

  • Fresh mint leaves

 

🥣 Instructions:

  1. Make the crust: In a bowl, combine almond flour, melted coconut oil, sweetener, and salt. Press into a 9-inch pie dish and chill in the fridge while you make the filling.

  2. Dissolve the gelatin: Pour boiling water over the gelatin and stir until fully dissolved. Add the cold water and stir again.

  3. Add the yogurt: Let the mixture cool slightly, then whisk in the yogurt (or whipped coconut cream) until smooth.

  4. Add strawberries: Fold in the sliced strawberries.

  5. Assemble the pie: Pour the filling into your prepared crust. Smooth the top and chill in the fridge for 4–6 hours, or until fully set.

  6. Top & serve: Just before serving, top with more strawberries, a dollop of whipped topping, or a sprig of mint if you're feelin' fancy. 🍓
