If there’s one meal that makes me feel like I’ve got my life together—even after a chaotic day—it’s this one.

This grilled steak with roasted Brussels sprouts is simple, satisfying, and feels just a little fancy… without actually being complicated. It’s protein-packed, naturally gluten-free, and comes together with just a few real ingredients. No fuss, no weird stuff—just flavorful steak, caramelized sprouts, and a dinner that checks all the boxes.

Ingredients

For the Steak:

  • 2 small sirloin or flank steaks (about 5–6 oz each)

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Optional: a squeeze of lemon or a sprinkle of fresh herbs after grilling

For the Brussels Sprouts:

  • 1 lb Brussels sprouts, trimmed and halved

  • 1 1/2 tbsp olive oil

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

 

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.

  2. Roast the Brussels sprouts: Toss halved sprouts with olive oil, garlic powder, salt, and pepper. Spread in a single layer on the baking sheet. Roast for 20–25 minutes, flipping halfway, until golden and crispy on the edges.

  3. Prep the steak: Rub both sides with olive oil, garlic powder, salt, and pepper. Let rest at room temp for 10–15 minutes.

  4. Grill the steak: Heat a grill or grill pan over medium-high. Grill steak 4–5 minutes per side for medium doneness, or to your liking. Let rest 5 minutes before slicing.

  5. Serve it up: Plate sliced steak with a generous helping of roasted Brussels sprouts. Add a squeeze of lemon or sprinkle of herbs if you like.
