These cookies are like a party in every bite.
Bright colors, fruity flavors, and that soft, chewy texture that kids (and adults) can't get enough of. If you grew up with Jello cookies like I did, you know they were a staple at birthday parties and sleepovers — sugary, neon, and super fun.

This version?
Still colorful and fruity, but made with a few better-for-you swaps so you can feel good about saying yes. Perfect for holidays, playdates, or just a rainy-day baking adventure with the kids.

 

🍓 Ingredients (Makes ~24 cookies):

  • 1 ¾ cups white whole wheat flour (or GF baking blend)

  • ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup coconut oil or unsalted butter, softened

  • ½ cup coconut sugar or cane sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 2–3 small boxes (3 oz) of natural or regular Jello powder (your favorite flavors!)

 

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C).
    Line a baking sheet with parchment paper.

  2. Mix dry ingredients:
    In a bowl, whisk together flour, baking powder, and salt.

  3. Cream wet ingredients:
    In a separate bowl, beat coconut oil and sugar until creamy. Add egg and vanilla, mix well.

  4. Combine:
    Gradually mix dry ingredients into wet until a dough forms.

  5. Divide & color:
    Divide dough into 2–4 sections. Mix 1–2 tbsp of Jello powder into each section (use different flavors/colors). Knead gently until evenly colored.

  6. Shape & bake:
    Roll into 1-inch balls, then roll in additional Jello powder for extra color. Place on baking sheet and flatten slightly with a glass. Bake for 8–10 minutes.

  7. Cool & enjoy:
    Let cool on the baking sheet for 5 minutes before transferring. Enjoy the fruity fun!
