  • 1½ tsp vanilla extract

  • 2 tbsp arrowroot powder or cornstarch (for thickening)

For the topping:

  • Toasted coconut flakes

  • Optional: coconut whipped cream or fresh berries

  1. Make the crust:
    Mix almond flour, shredded coconut, melted oil, maple syrup, and salt. Press into a parchment-lined 8x8 dish. Chill in the freezer while you prep the filling.

  2. Make the filling:
    Scoop the solid part of the chilled coconut milk into a saucepan (discard the liquid or save for smoothies). Add yogurt, maple syrup, vanilla, and arrowroot. Whisk and warm over low heat until thickened—about 5–7 minutes.

  3. Assemble:
    Pour the warm filling over the chilled crust. Smooth the top and refrigerate for at least 4 hours (or overnight) until set.

  4. Top + serve:
    Before serving, sprinkle with toasted coconut and optional coconut whipped cream or berries. Slice into bars and enjoy cold!
