This Asparagus and Mushroom Frittata is one of my go-to clean-out-the-fridge dinners — especially in the spring when asparagus is fresh and mushrooms are abundant. It’s light but filling, savory with a touch of earthiness, and so easy to make.

The best part? It’s packed with protein, naturally low in carbs, and only takes about 20 minutes from start to finish. I’ll even slice it up and pack leftovers for quick breakfasts the next morning. One dish, two meals. Total mom win.

  • 6 large eggs

  • ¼ cup milk (or dairy-free milk of choice)

  • 1 cup chopped asparagus (woody ends removed)

  • 1 cup sliced mushrooms (button, cremini, or shiitake)

  • ¼ cup diced onion

  • 2 tbsp olive oil or butter

  • Salt and pepper to taste

  • Optional: ¼ cup crumbled goat cheese or feta

  • Optional garnish: fresh parsley or chives

  1. Preheat oven to 375°F (190°C). If your skillet is oven-safe, you can use it start to finish!

  2. Sauté the veggies: In an oven-safe skillet, heat olive oil over medium heat. Add onion, mushrooms, and asparagus. Cook 4–5 minutes until softened.

  3. Whisk the eggs: In a bowl, beat eggs with milk, salt, and pepper.

  4. Pour + cook: Pour the egg mixture over the veggies. Let it cook on the stovetop for 1–2 minutes until edges just start to set.

  5. Bake it: Transfer the skillet to the oven and bake for 10–12 minutes, or until the center is just set.

  6. Serve: Let it cool slightly before slicing. Top with herbs or cheese if using.
